I am always making schnitzel. Sometimes it is with chicken, sometimes pork but always that crunchy goodness shines through.
By definition, a schnitzel is a thin, breaded and fried piece of meat. It makes for a quick weeknight meal. You can cut chicken into fingers and make homemade chicken fingers. I started to get bored with just plain breadcrumbs so I started to added other crunchy things to amp it up.
I was craving schnitzel but the only meat I had in the fridge was a pork tenderloin. I could have cut it into smaller pieces and pounded them out, but honestly, I wasn’t in the mood. A lightbulb went off in my head, why not do the breading on the whole tenderloin and finish it in the oven.
